Perfect pick-me up at 3pm 

There's something about having a bite-sized brownie mid-day. Dessert before dinner. A naughty indulgence? Whatever it is, it helps me power through the rest of the day . . . especially when it's paired with an iced-coffee. I know! SOOO not healthy. But, we didn't come here to get fitness tips, did we??

BROWNIE BITES:

Here's the scoop .  . . . Pre-heat oven at 375 and butter a 9x9 inch pan.

Ingredients:

12 Tb unsalted butter

8 oz unsweetened chocolate

3 large eggs

1.5 cups of sugar

1 tsp vanilla extract

1 cup AP flour

1 tsp salt

Whisk together dry ingredients and set aside. Melt butter and chocolate in a heatproof bowl over a pot of simmering water. Stir until melted and then remove from heat, set aside. In a large bowl, whisk together eggs, sugar, vanilla. Then, slowly add the melted chocolate and butter to the egg mixture. Fold in flour and salt. Spread evenly on a buttered 9x9 pan and bake at 375 for 20-25 minutes, rotating pan half way through. Enjoy!
